Established in 1997, the Square Waterhole vineyard lies in the Southern Fleurieu wine region, about 280 meters above sea level. With ample winter rainfall and generally cool dry summers this region is known for its excellent, controlled slow ripening environment.
The first wines were produced in 2003 and reflected this cool climate influence, which has become a hall mark of all Square Waterhole wines; the whites are crisp exhibiting fresh citrus and passionfruit characters whilst the reds are elegant exhibiting mainly berry flavours of blackcurrant, mulberries, blueberries, strawberries and cherries. The slow long ripening period preserves the fruitiness of the white varieties and provides smooth soft tannin for the reds.
