Made by one of Tasmania's finest winemakers in Andrew Hood, Wellington's wines are long and intensely flavoured, but fine and restrained. The whites are pleasingly crisp and acidic, exemplified by the slightly sweet but mineral 2004 Riesling and the refreshing 2003 Chardonnay. The Iced Riesling, which is concentrated in the winery, produced a deliciously flavoursome and essence-like wine in 2004.
